1. Roasted Balsamic Beetroot Wedges

This roasted beetroot recipe is so simple and delicious. It’s the perfect side dish for any roast dinner.

Ingredients (serves 4-6):

1 pack Strong Roots Roasted Beetroot Wedges

Drizzle balsamic vinegar

300g shallots

3-4 garlic cloves

Few sprigs of rosemary & thyme

Method:

1. Preheat the oven to 200°C.

2. Combine all of the ingredients together on a baking tray and roast for 25-30 minutes.

3. Serve and enjoy!

Vegetarian Easter feast: Roasted Balsamic Beetroot Wedges

2. The Ultimate Roast Veggie Platter

A guaranteed crowd pleaser, this platter brings and an explosion of flavour and colour.

Ingredients (serves 4-6):

Tray 1:

1 pack Strong Roots Garlic Roasted Sweet Potato

4-5 garlic cloves

Sprinkle coriander seeds

1 chilli, chopped

4 sprigs rosemary

Tray 2:

4 red onions

Drizzle balsamic vinegar

3-4 garlic cloves

Tray 3:

1 pack Strong Roots Mixed Root Vegetable Fries

3 sprigs thyme

1 clementine, juice & zest.

For the dressing:

1 tbsp horseradish sauce

2 tbsp crème fraîche

Juice half a lemon

1 tbsp olive oil

Salt & pepper

Method:

1. Preheat the oven to 200°C.  Lay out all ingredients on three separate baking trays. Roast for 25-30 minutes.

2. Mix together all the dressing ingredients.

3. Once cooked and crispy, combine the vegetables on a serving dish and dress with the homemade dressing and fresh coriander.
