Veganuary Bonus Recipe – Spinach Bites Rice Bowl by Somi

As part of our Veganuary food adventure this month, we asked vegan wellness coach Somi Igbene (@VeganbySomi) to create some vegan-friendly recipes for us. Here is the first of our bonus recipe series (we also have a few more in store for you)! The recipe she created is a super simple rice bowl with a sriracha sauce and hummus.

Ingredients – per rice bowl (1 person)

75g brown basmati rice

4-6 Strong Roots Spinach Bites

2 tablespoons sriracha

100g tenderstem broccoli

80g frozen peas

1/2 a small avocado

Method:

1. Cook the Strong Roots Spinach Bites and rice according to the packet instructions.

2. In the meantime, cook the broccoli and frozen peas in a pan of boiling water for 2-4 minutes until tender, seasoning with a pinch of salt if desired.

3. Once the rice and Strong Roots Spinach Bites are cooked, assemble into a bowl with the steamed vegetables and avocado.

4. Add the sriracha and enjoy!
