A Patatas Bravas Recipe For Those Who Love to Brunch

The just missed breakfast, nearly lunchtime slot we have come to know as Brunch has fast become a well-loved weekend eating ritual. It’s a glorious window in our hectic week schedules, where we can relax, gather with friends and lazily read the paper over scrumptious food. To honour this beloved meal time we’ve put together a Spanish inspired brunch recipe featuring our new product Garlic Roasted Sweet Potato. The sweet potato chunks are fried with chorizo, onions, garlic and blended with spices and tomatoes. The pièce de résistance is a fried egg on top, creating a unique spicy patatas bravas dish, perfect for brunch at home.


Ingredient Checklist:

  • 1 bag of Strong Roots Garlic Roasted Sweet Potato
  • 2 tbsp of olive oil
  • 1 chopped red onion
  • 1 clove of garlic
  • tsp smoked paprika
  • tsp cayenne pepper
  • 1 can of tomatoes
  • 100g chorizo chopped into cubes
  • 1 large egg


Step 1: 


Garlic Roasted Sweet Potato



Pour the bag of Garlic Roasted Sweet Potato onto a tray and place in the oven at 200℃ for 23-26 minutes. Heat the 1 tbsp of oil in a frying pan and cook the onion until it begins to soften, then stir in the garlic, smoked paprika and cayenne pepper. Add the tomatoes and bring to a simmer,  then cook for about 5 mins.


Step 2:


Chopped Chorizo



Heat another frying pan with 1 tbsp of olive oil and cook the chorizo for a few minutes, then add the Garlic Roasted Sweet Potato and spicy sauce. Fry the egg and place on top of the dish.
