A Starter Of Kale & Quinoa Burgers And Two Healthy Homemade Dips

If you’re having guests over for a dinner party and want to experiment with your menu, why not try our Kale & Quinoa Burgers cut into segments, accompanied by two flavoursome, healthy homemade dips for starters. The first dip boasts a rich and spicy flavour, made from roasted peppers, tomatoes, onions and a dash of balsamic. The second has a cooler taste, combining cucumber, yoghurt with a zingy zest of lemon and a sprinkling of dill.


Ingredient Checklist:

  • 3 Kale & Quinoa Burgers


For the Roasted Pepper, Tomato, Onion and Balsamic Dip:

  • 2 sliced red peppers
  • 5 chopped medium sized tomatoes
  • 2 chopped onions
  • 1 large chopped chilli
  • 1 chopped clove of garlic
  • 1 tablespoon of olive oil
  • Pinch of sugar
  • Pinch of salt
  • 1/2 lime juice
  • 1 tablespoon balsamic vinegar


For the Yoghurt, Cucumber, Lemon and Dill Dip:

  • 2 cups plain yoghurt
  • 1 chopped cucumber
  • 1/2 lemon juice
  • 1 clove of garlic
  • 1 tablespoon of olive oil
  • 1/2 cup of chopped dill
  • Pinch of salt



Put three burgers into the oven and cook for 12-15mins at 200°C.

Place the chopped peppers, tomatoes, onions and garlic onto a tray. Pour olive oil over the vegetables and add a pinch of sugar and salt. Place the tray into the oven and leave to roast for 20mins at 250°C. Once roasted, take out of the oven and blend. Then, add a squeeze of lime and a tablespoon of balsamic vinegar and mix.

Put the yoghurt into a bowl and add the chopped cucumber, garlic, dill, salt, olive oil, lemon juice and blend.

Finally, once the burgers are cooked cut them into segments and dip to your heart’s content!
