- 100g Sweet Potato Fries
- 1 avocado
- 1 tablespoon lime juice
- 1 egg
- Salt and pepper
1. Preheat oven to 200˚C.
2. Arrange the sweet potatoes in a single layer on an oven tray and bake for 23-25 mins.
3. Smash the avocado and add the lime juice.
4. Poach or fry an egg.
5. Arrange the Sweet Potatoes on a serving dish. Top with the egg, avocado and dust with salt and pepper.
